There is so much research and also so much 'bad' research out there (ie. industry funded) that it is nice to have someone go through it all and then explain it in layman's terms. Dr Gregor explains in detail what has been known since the days of Hippocrates (let thy food be thy medicine). This book makes it pretty clear why our moms are always preaching to 'eat your veggies!'. Dr Gregor's website, nutritionfacts.org is also highly helpful and motivational in choosing the right foods.
